Comoros Unit

Y’all I have sat here with this post half-written for like 2 years because I apparently forgot to make the recipe for Comoros. It needed a very specific ingredient and I bought the wrong thing, which means it was not going to work, so I wrote up everything else and it has sat here forever. Now I finally made the recipe and I’m ready to share this geography lesson with you that has been sitting her forever to add to my Africa Unit. Okay, now I’m gonna go write up this recipe and say I’ve been productive! Go me!

I did a quick google search and found some information on Comoros. Let me dig into my internet and see what I found.

Comoros Unit recipe: Mkatra Foutra

The site I found this describes it as a mix between a bread and a pancake, and I think that’s pretty decent description. I am not a morning person, so I can’t imagine waking up an hour before I want to eat breakfast to let the dough rise. I served this as a dessert for our small group along with a honey butter I made (whip together room temperature butter and honey, there done). These disappeared, there were none left.

I was thinking I could eat them for breakfast the next day, but no we had none left. Which was kind of awesome, but also made me sad because it is pretty delicious. It’s lightly sweet, and I personally wouldn’t add any syrup to this, but that’s just me.

Mkatra Foutra ingredients

  • 2 cups flour
  • 1/4 cup warm water (about as hot as a shower)
  • 1 egg
  • 1 heaping teaspoon active dry yeast
  • 1/4 teaspoon sugar
  • 1 cup coconut milk, more as needed
  • sesame seeds

Making the Mkatra Foutra

  1. Mix together the water, yeast, and sugar. Allow the yeast to rise for 10 minutes.
  2. While the yeast is rising, mix together the flour and salt. Then add in the water yeast mixture, and the egg. Add the coconut milk. The batter should be thick, but pourable, if it is not, then add more coconut milk.
  3. Cover the batter and leave to rise for 45 minutes to an hour in a dark warm place (An oven that has been turned on to heat to 175 then turned off and left slightly cracked open is a great place to allow the dough to rise).
  4. Heat the griddle as if cooking pancakes. When the griddle is heated, pour about 1/3 cup of the batter per pancake on the griddle and sprinkle with sesame seeds.
  5. Cook until the bottom is browned, and you can start to see it cooking on the top, then flip and cook the other side.
  6. Remove once both sides are cooked. Enjoy with toppings of your choice.
