Hi! Future Ticia 2023 here, I’m updating this crockpot chicken parmesan recipe post with the new logo and generally updating it, like adding a recipe card, but just wanted to let you know this is one of my tried and true recipes, and a common go to when I have a small-ish crowd.

Isnโ€™t that a great word? Discombobulated?ย  But, back to the topic.*

I came up with a great idea.ย  I created my online cookbook on Pinterest.ย  I realized the other week I do most of my recipe planning as I sit at the kitchen table and scroll through Pinterest for recipe ideas.ย  But my recipes for busy Moms board is filled with ideas I want to try and some ideas Iโ€™ve tried, but I donโ€™t want to scroll through 300 recipes (and oh so many desserts) every week.

Iโ€™ve started pinning my favorite recipes to it, but many of them I donโ€™t have a pin for because theyโ€™re handwritten notecards, so Iโ€™m rectifying that. ย First up: Crockpot chicken parmesan.

*Originally this post was titled Crockpot Chicken Parmesan and the week I feel discombobulated

Crockpot Chicken Parmesan ingredients

Chicken Parmesan ingredients

1 envelope French onion soup (I found a French onion soup homemade mix, so 1/4 cup of that), 1 can cream of chicken soup, 1 can cream of mushroom soup (apparently I don’t have a recipe for that, so let me find the one I use… oh that’s no longer there, new cream of mushroom soup recipe), 1.5 cups of milk, 1 cup dry white wine (or apple cider), 1 cup rice, 6 chicken breasts, 2 tablespoons butter, 2/3 cup grated parmesan

My substitutions this time because I was out: apple cider for the wine (I almost always do this, I rarely remember to buy the wine), ranch mix (homemade ranch mix from here), oh and I doubled the entire sauce mixture for extra โ€œrice stuffingโ€

For those who donโ€™t use canned ingredients (which Iโ€™m slowly moving away from, and oh my is it delicious):ย  I substituted homemade cream of mushroom soup (we make this about every 2 months).

  1. Mix together French onion soup, cream of chicken soup, cream of mushroom soup, milk, wine, and rice. Future Ticia 2023 wants to add, I have discovered you really need to mix this first not in the slow cooker because every time I think I’ll do it in the slow cooker, ends up in not as satisfying results.
  2. Put the chicken breasts into the slow cooker and pour the soup/rice mixture over it.
  3. Cut up the butter into small pieces and put on top of this mess.  Then sprinkle a very generous handful of cheese on top.
  4. Cook in the slow cooker for 8 hours.
  5. Eat this delicious Chicken Parmesan and say โ€œyum, yum, yum.โ€

Expect a few more recipes from me from time to time as I slowly go, โ€œHey, I need a recipe for this to pin.โ€

Funny Story about this Crockpot Chicken Parmesan

I first had this way back when Jeff and I were dating. Our singles small group decided to do a potluck dinner, and as we gathered together, we discovered all of the men had made something from scratch. Jeff had made lasagna, our friend Jeremy made this crockpot chicken Parmesan, and the other guy had made something that I don’t remember what it was.

Whereas all of the women who came brought ready-made stuff. It was so completely opposite of the assumed events that we all were quite amused by the end result.

  1. whew quite a week!! Yay for AAR4! We are working our way through 3 right now ๐Ÿ™‚ I am going to watch Moms night out with a bunch of homeschool moms tonight (outside). I am super excited! I love that picture of Princess holding the baby ๐Ÿ™‚ So sweet!

    1. You are going to love out! I laughed through the whole movie.

  2. We had a skunk incident this year as well- back in August. Thankfully the smell has gone (unless the dog gets wet, then we smell it all over again). Oh the joy of curious pets! ๐Ÿ˜‰

Love the idea of a candy mosaic. We’ll be studying Rome this year and I’m sure my daughter would love to try that!

    1. It was so much fun! The kids especially loved at the end when I let them have a little bit of the candy they’d used to eat.

  3. Discombobulated is one of my favorite words, running a close second to flibertygibit, as in “I am such a discombobulated flibertygibit today”:)

    1. Ooohhhh, flibertygibit is another great word. So many great words in the English language, it’s a shame more of the general population doesn’t use them.

  4. The recipe looks good. I hope you feel better soon – teaching wiggly kids with headaches is not fun!

    1. So very true. Thankfully the pressure systems have evened out, of course that got better and now I’ve caught a cold. So not fair.

  5. What a fun busy week! We’re still ploughing through AAR level one, but it is at last starting to sink in.
Your recipe sound delicious, as do all your educational snacks. Not that my mind is on food at all at the moment…..

    1. AAR1 seemed to take forever to sink in for my kids.

  6. I hope this next week is easier for you! That armored knight hoodie is cool!

    1. It is the coolest thing ever. I hope I can replicate it.

I finally saw Moms’ Night Out and loved it, too. Definitely a NEED to watch.

Thanks for linking to the ranch mix. ๐Ÿ™‚

    1. The ranch mix is awesome!

I know, every Mom I know NEEDS to watch it!

  8. Great idea to pin recipes of your own to keep track of! Sounds tasty ๐Ÿ™‚ And that knight hoodie looks amazing!! Are you saying you can replicate that?? Soo impressed!

    1. I can certainly TRY to replicate it. The pieces are fairly obvious for how she made it, but it’s the duplicating that I think will be difficult.
