The interesting thing about studying Africa is how recently many of these countries have formed, and how poorly country lines were formed. A lot of this is a result of European colonization, and arbitrarily drawing up lines. This causes things like having two countries with the name of Congo in it. Today’s geography lesson is a Democratic Republic of the Congo Unit.

Democratic Republic of the Congo Unit Resources
Okay, another country that does not have any books according to my library. Honestly as I got into the more “obscure” (read not Egypt) countries of Africa I sometimes didn’t even bother researching. Here are the posts I found about the Democratic Republic of the Congo.

Democratic Republic of the Congo recipe: Moambe chicken
I went to write this post and discovered I had not actually made the meal… It’s kind of impressive because I swear I had, so I had to remake this a few weeks ago to finish writing this post.
I did change up some of the ingredients from the original recipe, primarily the chicken.
Chicken Moambe ingredients
- 2 pounds chicken thighs, skin removed
- 1/2 onion chopped
- 2 cloves garlic minced
- 1 cup tomato sauce
- 3 tablespoons peanut butter
- oil for frying
- 1/2 teaspoon cayenne pepper
- 1 teaspoon chicken bouillon
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
Making chicken moambe
- Add oil to the pan and heat, once hot add the chicken to the pan to brown both sides, then remove the chicken.
- Saute the onions and garlic. Add tomato sauce and spices.
- Add the chicken and stir. Bring to a boil and simmer on low heat for 15 minutes.
- Take out the chicken and add peanut butter, stirring it in, re-add the peanut butter and simmer for another 5-10 minutes.
Chicken Moambe
This chicken moambe is a great meal as you study the African country of Democratic Republic of Congo.

It was a decent meal, but no one was super excited by the food.

In case you are wondering, I like to look up how many of that country could fit in Texas, or how many of Texas can fit in a country. It’s stupid, but it gives me a frame of reference. You can fit 35 Texases in Congo. That country is huge!

Yes, this is probably one of the least known countries, at least in the west. All I can think about are blood diamonds and civil war. Oh, yes, and cannibalism. I am sure, there are positives… for example, this recipe sounds quite good!
