When I started this Dominica Unit, I didn’t know there was a difference between Dominica and Dominican Republic. This is one of the things I love about our geography lessons in our homeschooling I get to learn new things all the time.

Dominica Resources

Just a quick side note, I realized I’ve been mentally pronouncing the country wrong. Even with having studied it several months ago, I forgot we had done that.
Dominca recipe: Calypso Chicken
I thought I’d try a recipe a few of my family wouldn’t particularly like, so I picked Calypso Chicken. I lied, they were mostly vaguely indifferent, but I really liked the cashew nuts.
Ingredients
- 3 pounds chicken cut into bite-size pieces (I picked 5 chicken breasts)
- 1/4 pound cashew nuts
- 6 slices ginger
- 3 green onions
- 4 ounces mushrooms
- 2 garlic cloves
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 2 tablespoon sugar
- 3 tablespoons red wine
- 2 tablespoons butter
Let’s make that chicken!
- Season chicken with salt, pepper, one clove of garlic, vinegar, and thyme, and marinate for 3 hours
- In a skillet melt butter and add sugar, when very hot brown the chicken
- In another fry pan heat some oil, fry cashews, and set aside
- In the same pan, you fried the cashews, and cook the garlic, mushrooms, onions, and ginger.
- Add wine and 1/4 cup water to the cooking skillet
- Add chicken and cook for 25 minutes until tender.
I served this with mashed potatoes.

Dominica is an interesting country, and there were some fun facts to do with it.
- With so many volcanoes one of their primary exports is pumice and volcanic ash
- They have a town called Massacre
- It was a pirate haven (and one of the Pirates of the Caribbean movies was filmed there)
- highest concentration of active volcanoes
- They have a whole bunch of centarians
The big problem with learning about all of these countries, it leaves me wanting to travel to ALL OF THEM. I don’t have that travel budget.
Oh well, a girl can dream.

25 minutes for chicken? Sounds like a long time! Everything must be cooked to mush 🙂 And I am surprised to see mushrooms as an ingredient in an island dish. I love cooking with mushrooms but this comes from my childhood picking wild mushrooms in local forests…
