We like fish, I’m horrid at cooking it, so Jeff always grills it, but here is our easy fish recipe that we use every time we cook fish.
It is so easy, I don’t even need words:
We buy about 1 tilapia filet per person, then pour half a bottle of Italian dressing into a ziploc bag, seal it up, marinate for an hour or so, and then Jeff grills it outside on some foil or in a cast iron pan.
Meanwhile I cook some rice in our Rice Cooker {affiliate link, similar to what we own}, and then everyone eats like crazy, and I have no leftovers. None, not a single bit. If I’m feeling ambitious, we add in a salad that also gets devoured. Maybe with some feta cheese or Parmesan. Everything is better with cheese.
Mac quite happily cleaned up the bits and drabs.
Oh, now you have got me hungry for some fish!

Dislike or allergy? I’ve got a couple of friends that don’t like it either. Tilapia doesn’t have a very strong fish taste/smell, so it works great for us.
We love fish cooked this way, although my favorite is when Mike grills it on a cedar plank. Delicious!!!
We haven’t tried the cedar plank method yet, though it’s very popular here in Texas.
