There are so many cool countries in the world, and I have to admit I wish I had a much bigger travel budget, and more time than I do. Looking at pictures of Ecuador I want to see it, it looks amazing. Let’s dig into our Ecuador Unit for geography lessons as part of a South America Unit.

Ecuador Unit: Slow Roast Pulled Pork
I picked this pulled pork recipe because it’s not too spicy and we all like garlic. After all, no one wants a vampire attack.
However, I discovered there is a point where even my family says, “Mom, that is too much garlic.”
I switched the recipe to a slow cooker recipe, I don’t know if that changed the taste substantially.
pulled pork ingredients
- pork shoulder (I just grab a large-ish one)
- 8 cloves garlic
- 1 tablespoon cumin
- 1 tablespoon coriander
- 2 teaspoons smoked paprika
- 2 tablespoons butter
- 2 limes juiced
- 1 IPA beer
Super complicated instructions to make the pulled pork
- In a food processor add garlic, cumin, coriander, paprika, butter, juice from 1 lime, and a pinch of salt.
- Blend together, then cover the pork shoulder with the mixture.
- Place in the slow cooker and pour the beer over it.
- Cover and cook on low for 8 hours or high for 4 hours.
Ecuadoran pulled pork
This pulled pork recipe is simple and you probably have most of the ingredients in your pantry.
Ingredients

Ecuador Unit Notebooking pages
We filled out the South America notebooking pages and there were a few items I found interesting.
I learned a Star Wars fact as we watched the video!
- They have the highest concentration of volcanos!
- They administer the Galapagos Islands, which is interesting to me.
- Greedo in Star Wars speaks Quita (a Native language from Ecuador)!

How interesting! Yes, this is the country I would love to visit too. And the recipe looks good too!
That recipe sounds delicious, but maybe I’ll tone down the garlic.
