I have no clue what to write for an introduction here. So imagine I wrote something super original, about this Ethiopia Unit, and you were super entertained and I got your attention. Sorry, my brain is fried right now so I’m sure I’ll be revising this geography lesson later as I’m adding it into my Africa Unit.

I’m gonna tell you none of these books are super great, and one doesn’t even take place in Ethiopia, but rather takes place in America as someone remember their home

  • Christmas around the world– again, zero memories, which tells you how memorable these books are
  • Faraway Home– I’m a sucker for a story like this, so I’m totally happy to read a good story of a father telling about his life back where he grew up
  • New shoes for Helen– a simple book showing how everyone has the same experiences around the world, so Helen getting new shoes in Ethiopia is the same experience for kids in the USA

Ethiopia Unit recipe: Injuera (Ethiopia Flatbread)

We combined this recipe with another country’s recipe, possibly with two other country’s recipes. This was a type of flat bread that reminds me a fair amount of crepes.

Injera ingredients

  • 3 cups self-rising flour
  • 1/2 cup whole wheat flour
  • 1/2 cup cornmeal
  • 1 tablespoon active dry yeast
  • 3 1/2 cups warm water

Making the Injera

  1. Mix it all together to form the batter.Set the batter aside to let it rise and become stretchy.
  2. When ready to cook, stir batter again while the pan is heating.
  3. Cook on pan with no oil on medium heat, swirl in pan to form a thin layer.
  4. Watch as the bubbles form, do not flip.
  5. Injera is done when bubbles have formed over entire surface, slip out of pan and pour in batter for next injera.

Prep Time 10 minutes
Cook Time 3 minutes
Total Time 3 minutes

Ingredients
