Grenada Unit

Sadly, every time I think of Grenada I think of the song, which I know has absolutely NOTHING to do with the country of Grenada, but they sound similar, so the entire time I’m writing this post in my head, I will be hearing, ‘Hello Mudder, hello Fadder…” So if you think I’ve suddenly lapsed off in the middle of this geography lesson, you will know it has nothing to do with our Grenada unit and everything to do with my ADHD. I’m sorry.

Grenada Recipe: Grenadian Chicken Stew

Grenadian Chicken Stew

I have a boy who loves soups, any and all soups, so when I saw one of the national dishes of Grenada was Grenadian chicken stew, I picked it up.

Grenadian Chicken Stew ingredients

  • 6 chicken legs, skin removed (if I made this again, I wouldn’t bother removing the skin)
  • 3 carrots diced
  • 2 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 2 teaspoons curry powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 2 tablespoons sugar (I’m pretty sure we left this out, I think Superman cooked this and I’m sure he left it out because I KNOW he would have been freaking out trying to do this)
  • 2-3 cups chicken broth
  • 1 tablespoon ketchup

Let’s make the soup!

  1. In a large bowl add chicken, carrots, garlic, onion, and bell pepper, then mix together.
  2. Add the curry powder, smoked paprika, oregano, and salt and pepper to taste, then stir evenly to coat the whole mixture.
  3. In a large pan, melt the sugar over high heat, but keep a close eye on it because the sugar will go from melting and that great dark brown color to burnt and something you will chisel off in barely any time (I totally don’t remember doing this step, so I probably accidentally skipped this step, just as well because I’m pretty sure I would have ended up with the chiseling the sugar off end result)
  4. Pour the chicken mixture into the pan, and then add chicken broth until the chicken mixture is completely covered and let simmer over medium heat until the chicken falls off the bone. This will take about an hour or so to happen.
  5. Once fully cooked, serve over cooked rice.

The Grenadian chicken stew is a thick stew perfect for a cold winter night.

Ingredients

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano

Notes

In the original recipe, they added 2 tablespoons sugar at the beginning, which was melted into a syrup and the rest of the ingredients were added, but I accidentally left out this step

Caribbean nations fascinate me because they’re all island nations (obviously), but some of the nations are a single island, and some nations are multiple. Grenada is composed of several different islands.

But, here are the fun facts I wrote down:

  • Unlike most places, they hold Carnivale in August
  • It was briefly communist
